Fried Chicken Adobo

Ingredients
  • 1 head garlic
  • 1/2 cup Filipino soy sauce (Silver Swan, etc.)
  • 1 cup cane vinegar (Datu Puti, etc.)
  • 2 bay leaves
  • 1.5 pounds boneless chicken thigh, cubed
  • 1/2 cup cornstarch
  • 1 cup flour
  • neutral oil for shallow frying
Instructions
    Marinate the chicken
  1. Mince the garlic. Add to a bowl.
  2. Add the soy sauce, vinegar, and bay leaf and stir.
  3. Add the cubed chicken thigh to the marinade. Cover and let marinate for an hour or overnight.
  4. Fry the nuggets
  5. Mix the cornstarch and flour.
  6. Drain the marinade. Toss the chicken in the flour mixture to coat the pieces thoroughly.
  7. Fry the chicken pieces in about an inch of hot oil. Don't crowd the pan!
  8. Optional: Air fry in batches at 400F for 5 minutes to make them extra crispy.
